As Hurricane Helene sweeps through the country bringing with it a rapid transition into FALL, the air has begun to feel chilly and the leaves are quite literally blowing off the trees. While the hurricane is shaking things up outside it’s time to shakeup our meal plan. As the nights are cooling off I find myself instinctually turning inward and I get a sudden need to feed my soul and nourish my body. Fall is a time of transition not just for the trees but for us as well. It’s a time of introspection, and with it comes the craving for cozy, nourishing meals to get us through the darkening days ahead. Maybe it’s the hint of danger and unpredictability at the changing season, that stirs a deep corner of our primitive minds; stirring a sense of wildness, a need to survive the cold and dark beyond the fireside. Maybe this comes from our constant human battle with the elements and drives us to seek comfort in the simplicity of stirring up some warmth and safety in a fresh bowl of soup! There’s nothing like a bowl of comforting soup to welcome this change of season! That said I’ve handpicked three delicious and nutritious soup recipes that capture the essence of Fall.
